Evolution without revolution
In May 2022, the Restaurant at the Hôtel DuPeyrou was taken over by a trio of young entrepreneurs from Neuchâtel, accompanied by chef Edmond Bavois.
A turning point for one of the most prestigious gourmet restaurants in the city of Neuchâtel, this handover is part of a spirit of continuity and perpetuation of the exceptional work carried out by the Penlington family for a quarter of a century.
